The Kind Project’s Chia Cup

Kick start your day with stacks of wholefood goodness with this fresh on-the-go breakfast cup.

Ingredients

  • 1 tbsp black chia seeds
  • Boysenberry coconut yoghurt
  • 2/3 cup muesli
  • 1 cup coconut milk
  • Fresh seasonal fruit

Toppings

  • Coconut chips
  • Toasted almonds
  • Cacao nibs

Method

  • Mix chia seeds with coconut milk, stirring continuously until there are no lumps. Once the mixture is well combined and runny, leave to set for at least 2 hours.
  • In a serving glass, place the following layers: 1/3 cup muesli, 2 spoons of yoghurt, 1/2 of the chia seed mix, fruit, and then repeat.
  • Decorate with toppings and serve.
